Tips & Tricks (5)
- Use Natural Peanut Butter 🥜Choose natural peanut butter without added oils or stabilizers for the smoothest texture and richest flavor; stir well before measuring to incorporate any separated oil.
- Temperature Control is Key 🌡️Bring the mixture to exactly 238°F (soft-ball stage) using a candy thermometer, then remove from heat immediately to prevent graininess and achieve that perfect creamy consistency.
- Cool Before Setting ❄️Allow the fudge mixture to cool to 110°F before pouring into your prepared pan; this prevents crystallization and ensures a silky, smooth final texture.
- Butter Your Pan Generously 🧈Line your baking pan with parchment paper and butter it well, or use a silicone mat to prevent sticking and make cleanup effortless.
- Beat for Creaminess 🥄After cooling, beat the fudge mixture vigorously for 2-3 minutes with a wooden spoon to incorporate tiny air bubbles, creating an incredibly creamy mouthfeel.
