Pepper Jelly Pinwheels
Instructions
1
In a small bowl add the cream cheese and pepper jelly and beat using a hand mixer until creamy. Add the salt, pepper and onion powder and mix again.
2
Lay one tortilla on a clean surface, spread about 2 spoonfuls of the cream cheese mixture on one side of the tortilla. Sprinkle some of the cheese on top. Sprinkle a pinch of bacon and scallions.
3
Now take one side and roll into a super tight log. Try to make it as tight as possible. Wrap it tightly in Saran Wrap. Repeat with the other tortillas. Once they are all tightly wrapped, place in the refrigerator for 20 minutes.
4
Once the 20 minutes are up take out the fridge and remove from the plastic wrap making sure to not unroll the tight log it’s in. Cut the ends off where it’s just mostly tortilla.
5
Cut 1 to 1 ½ inch slices down the log, making little pinwheels. Serve and enjoy!

Tips & Tricks (5)
- Crisp Bacon to Perfection 🥓Cook bacon until it's just crispy, then crumble it finely so it distributes evenly throughout the filling and doesn't create lumps that prevent tight rolling.
- Soften Cream Cheese First 🧈Let cream cheese sit at room temperature for 15 minutes before mixing to ensure it spreads smoothly and evenly across the tortilla without tearing.
- Balance Your Pepper Jelly Ratio 🌶️Use a thin, even layer of pepper jelly mixed directly into the cream cheese rather than spreading it separately—this prevents it from pooling and leaking out during slicing.
- Chill Before Slicing ❄️Refrigerate the rolled tortillas for at least 30 minutes before slicing to keep the pinwheels intact and prevent the filling from smearing or crumbling.
- Toast Tortillas Lightly 🔥Warm tortillas in a dry skillet for 10 seconds per side before assembling to make them pliable and prevent cracking when rolling, while adding subtle depth of flavor.
