Ingredients

  • 8 ounces - Cream cheese
  • ½ cup - Pepper jelly
  • 1 tsp - Salt
  • 1 tsp - Pepper
  • 1 tsp - Onion powder
  • 4 - Tortillas
  • 1 cup - Colby Jack
  • 1 cup - bacon
  • ½ cup - Scallions

Instructions

  1. In a small bowl add the cream cheese and pepper jelly and beat using a hand mixer until creamy. Add the salt, pepper and onion powder and mix again.
  2. Lay one tortilla on a clean surface, spread about 2 spoonfuls of the cream cheese mixture on one side of the tortilla. Sprinkle some of the cheese on top. Sprinkle a pinch of bacon and scallions.
  3. Now take one side and roll into a super tight log. Try to make it as tight as possible. Wrap it tightly in Saran Wrap. Repeat with the other tortillas. Once they are all tightly wrapped, place in the refrigerator for 20 minutes.
  4. Once the 20 minutes are up take out the fridge and remove from the plastic wrap making sure to not unroll the tight log it’s in. Cut the ends off where it’s just mostly tortilla.
  5. Cut 1 to 1 ½ inch slices down the log, making little pinwheels. Serve and enjoy!
