Tips & Tricks (5)

  • Crush Candy Canes Strategically 🍭
Pulse candy canes in a food processor until they're mostly fine with a few pea-sized chunks remaining—this prevents over-grinding into powder while creating texture variation in the final cookie.
  • Brown Your Butter for Depth 🧈
Melt your unsalted butter and let it brown for 2-3 minutes until nutty and fragrant, then cool completely before mixing—this amplifies the chocolate-peppermint flavor complexity exponentially.
  • Chill Dough for Shape Control ❄️
Even though this recipe has minimal chill time, refrigerate for at least 20 minutes so the dough holds its cookie shape rather than spreading into a flat brownie during baking.
  • Don't Overmix After Chocolate Addition 🍫
Fold in chocolate chunks gently with a spatula after combining wet and dry ingredients—overmixing develops gluten that makes brookies tough instead of chewy and fudgy.
  • Underbake Slightly for Chewiness 🕐
Remove brookies 1-2 minutes before they look completely set—they'll continue cooking on the hot pan and set up to that perfect brownie-like chew as they cool.
