Instructions

1
|
Preheat the oven to 350℉.
2
|
Spray a 9x9-inch baking dish with non-stick cooking spray or line with parchment paper. Set aside.
3
|
In a large mixing bowl, combine the sugar and butter. Beat with a mixer until it is light and fluffy.
4
|
Add the egg and vanilla and beat again.
5
|
Add the salt, baking powder, and about half the flour. Beat until combined.
6
|
Add the rest of the flour and beat until a batter forms.
7
|
Stir in the crushed peppermints until combined.
8
|
Pour and scrape the batter into the prepared 9×9 baking dish.
9
|
Spread the batter around evenly. If it's really thick, you might need to use your hand to spread it.
10
|
Bake at 350℉ for 20-25 minutes.
11
|
Let the bars cool completely in the baking dish on a wire rack.
12
|
Once cooled completely, spread with peppermint frosting (see below).

Frosting

1
|
In a large mixing bowl, mix the powdered sugar, butter, peppermint extract, vanilla extract, and milk until a frosting forms.
2
|
Spread the frosting on top of the cookie bars evenly.
3
|
Let the frosting set (at least 30 minutes) before cutting into squares.

Tips & Tricks (5)

  • Crush Candy Uniformly 🍬
Use a food processor or rolling pin to crush peppermint candies into consistent, fine pieces for even distribution and a more professional presentation in your cookie bars.
  • Extract Balance Technique 🌿
When adding peppermint extract, start with half the recommended amount and taste, as it can quickly become overpowering and ruin the delicate sugar cookie flavor.
  • Room Temperature Ingredients 🌡️
Ensure butter and eggs are at room temperature before mixing to create a smoother, more homogeneous batter that results in a more tender and consistent cookie bar texture.
  • Frosting Chill Trick ❄️
After applying the peppermint frosting, refrigerate the bars for 15-20 minutes to help the frosting set and make cutting into clean, sharp squares much easier.
  • Even Baking Hack 📏
Use parchment paper with slight overhang and smooth the batter into the corners with an offset spatula to ensure uniform thickness and prevent dry edges.
