
Perfect Whole Roasted Beets

Ingredients
- 4 - beets
- 2 teaspoons - extra-virgin olive oil
- 1 tsp - salt
- ½ tsp - black pepper
Instructions
- Preheat the oven to 400°F.
- Cut 4 sheets of aluminum foil, each large enough to wrap a beet.
- Place a beet in the middle of each sheet of foil. Drizzle each beet evenly with olive oil and sprinkle with the salt and black pepper.
- Tightly wrap the foil sheets around each beet and place on a baking sheet.
- Roast the beets on middle rack of oven until easily pierced with a fork, 60-70 minutes.
- Check to see that beets are done. Remove from oven or add time as needed.
- Allow the beets to cool for 20 minutes, or until cool enough to handle.
- Unwrap the beets and rub the skin from each with a spoon. Discard the skins, and slice beets as desired. Serve immediately, or refrigerate for later use.
