Perfect Whole Roasted Beets
Instructions
1
Preheat the oven to 400°F.
2
Cut 4 sheets of aluminum foil, each large enough to wrap a beet.
3
Place a beet in the middle of each sheet of foil. Drizzle each beet evenly with olive oil and sprinkle with the salt and black pepper.
4
Tightly wrap the foil sheets around each beet and place on a baking sheet.
5
Roast the beets on middle rack of oven until easily pierced with a fork, 60-70 minutes.
6
Check to see that beets are done. Remove from oven or add time as needed.
7
Allow the beets to cool for 20 minutes, or until cool enough to handle.
8
Unwrap the beets and rub the skin from each with a spoon. Discard the skins, and slice beets as desired. Serve immediately, or refrigerate for later use.

Tips & Tricks (5)
- Choose Similar-Sized Beets 📏Select beets of uniform size to ensure even cooking throughout the roasting process, preventing some from being undercooked while others become mushy.
- Don't Peel Before Roasting 🌱Keep the skin intact during roasting to lock in nutrients, maintain vibrant color, and prevent the beets from drying out—the skin slips off easily after cooking.
- Wrap in Foil for Steaming 🫧Wrap oiled beets individually in foil to create a steam environment that tenderizes them faster and keeps the flesh incredibly moist and tender.
- Test Doneness with a Fork 🔱Pierce the thickest beet with a fork—it should slide through with minimal resistance when perfectly roasted, typically 45-60 minutes at 400°F depending on size.
- Ice Bath for Easy Peeling 🧊Immediately place hot roasted beets in ice water for 2-3 minutes to stop the cooking process and make the skin slip off effortlessly without damaging the vibrant flesh.
