Preheat the oven to 400°F.

Cut 4 sheets of aluminum foil, each large enough to wrap a beet.

Place a beet in the middle of each sheet of foil. Drizzle each beet evenly with olive oil and sprinkle with the salt and black pepper.

Tightly wrap the foil sheets around each beet and place on a baking sheet.

Roast the beets on middle rack of oven until easily pierced with a fork, 60-70 minutes.

Check to see that beets are done. Remove from oven or add time as needed.

Allow the beets to cool for 20 minutes, or until cool enough to handle.

Unwrap the beets and rub the skin from each with a spoon. Discard the skins, and slice beets as desired. Serve immediately, or refrigerate for later use.
