My Pierogi Lasagna is a delicious alternative to typical lasagna. Layers of pasta, onion, potato and cheese all come together to make pure comfort food. It’s truly irresistible and perfect for feeding a crowd. I love to bring this to pot luck dinners.

Ingredients

  • 16 ounces - Lasagna noodles
  • 2 ounces - Idaho Instant Potatoes
  • 1 cup - Butter
  • 1 - onion
  • White American cheese

Instructions

  1. Preheat oven to 350℉.
  2. Prepare lasagna noodles according to package directions; drain and lay out on parchment paper until ready to use.
  3. Prepare instant potatoes according to package directions.
  4. Add the butter and onions to a sauce pan and melt over medium heat.
  5. Place ¼ cup of the butter mixture in the bottom of a 13×9 baking dish.
  6. Add a single layer of noodles (about ⅓ of the package).
  7. Top with ⅓ of the prepared potatoes and spread to cover noodles.
  8. Drizzle with ¼ cup of the butter mixture.
  9. Top with a single layer of cheese slices (about 6-8 slices).
  10. Add two more layers of noodles, potatoes and butter.
  11. Top with a final layer of cheese.
  12. Bake for 25-30 minutes or until cooked through and bubbly.
