Tips & Tricks (5)
- Score the Fat Cap ✂️Score the pork butt's fat cap in a crosshatch pattern before slow cooking to allow the spice rub to penetrate deeper and render fat more evenly for better flavor distribution.
- Toast Your Spices First 🔥Bloom the ground cumin, chipotle, chili powder, and paprika in a dry skillet for 30 seconds before mixing into your rub to amplify their depth and eliminate raw spice flavors.
- Use Peach Liquid Strategically 🍑Reserve the heavy syrup from the canned peaches and whisk it into your barbecue sauce and beef broth mixture to create a caramelized glaze that balances the smoky spices with natural sweetness.
- Skim Fat Before Shredding 🥄After 8 hours of cooking, let the pork cool for 15 minutes, then skim the fat layer from the top of the liquid before shredding to control richness while keeping the meat moist.
- Toast Taco Shells Lightly 🌮Warm your flour soft taco shells directly over low heat or in a dry skillet for 10-15 seconds per side just before serving to enhance their flavor and improve their ability to hold juicy pulled pork without tearing.
