Pumpkin Cake with Cream Cheese Icing
For the Cake:
For the Frosting:
To make the Cake
1
Preheat the oven to 325℉. Grease a 9X13-inch pan with non-stick cooking spray.
2
In a large mixing bowl, mix together the oil, brown sugar, eggs, sour cream, pumpkin puree, and vanilla until combined.
3
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and spices. Add the dry ingredients to the wet and stir just until no streaks of flour remain.
4
Pour batter into the prepared pan and smooth the top with a spatula. Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean. Let cool to room temperature on a wire rack before topping with the frosting.
To make the Frosting
1
In a large mixing bowl using an electric handheld mixer, beat the softened cream cheese on high speed for 1 minute. Add the powdered sugar and mix on low speed until incorporated before turning the mixer up to high speed and beating for another 1 minute. Spread the frosting onto the fully cooled cake using an offset spatula.

Tips & Tricks (5)
- Room Temperature Ingredients 🌡️Bring cream cheese, eggs, and sour cream to room temperature before mixing to ensure smooth, lump-free frosting and even cake crumb structure.
- Bloom Your Spices 🌿Whisk all spices (cinnamon, nutmeg, ginger, allspice) together with flour before adding to enhance their flavor intensity and prevent clumping in the batter.
- Don't Overmix the Batter ✋Mix wet and dry ingredients just until combined to avoid developing excess gluten, which will make your pumpkin cake dense and tough rather than moist and tender.
- Stabilize Cream Cheese Frosting 🧊Chill your bowl and beaters before whipping frosting, and use powdered sugar rather than granulated to achieve a silky, stable consistency that won't weep or separate.
- Test Doneness Strategically 🍽️Use a toothpick inserted into the center—it should have moist crumbs clinging to it, not be fully clean, ensuring the cake stays incredibly moist without being underbaked.
