Separate the egg, beat the egg white with a pinch of salt until stiff, and set aside briefly. Mix the egg yolk with the quark, pumpkin puree, milk, and cinnamon.

Stir the dry ingredients into the egg yolk mixture, then carefully fold in the beaten egg whites.

Spread oil in a pan, pour in the Kaiserschmarrn batter, cover, and cook over medium heat for about 3-5 minutes, until the batter has set and the underside is golden brown. Carefully flip the pancake and cook on the other side for another two to three minutes.

Reduce the heat and tear the Kaiserschmarrn into bite-sized pieces using two wooden spoons or similar utensils. Add sugar and let it caramelize for about a minute. Then serve with your choice of side dishes.
