Ingredients

  • ¾ cup - salted butter*
  • 1 cup - white sugar
  • 2 - eggs
  • 1 ½ cups - pumpkin puree
  • 2 cups - all-purpose flour
  • 1 tsp - baking soda
  • 1 tsp - baking powder
  • ½ tsp - salt
  • 1 tsp - ground cinnamon
  • 1 tsp - ground cloves
  • 1 tsp - ground nutmeg
  • 3 tablespoons - butter
  • 3 tablespoons - all-purpose flour
  • ½ cup - brown sugar
  • 1 tsp - ground cinnamon
  • ¾ cup - pecans

Instructions

  1. Preheat the oven to 350℉ and prepare regular-sized muffin tins with either non-stick spray or muffin liners.
  2. Cream together the softened butter and white sugar for 1 minute. Add the eggs and pumpkin puree and continue mixing until incorporated.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, and spices. Add to the wet ingredients and mix on low speed just until incorporated.
  4. Scoop the muffin batter into the prepared tins. Stir together the melted butter, brown sugar, flour, cinnamon, and chopped pecans to make a streusel. Sprinkle on top of the batter and bake in the preheated oven for 25-30 minutes or until a tester inserted into the center comes out clean. Let cool in muffin tins for 5 minutes before transferring to a wire rack to finish cooling. Enjoy!
