Ingredients

  • 2 cups - Flour
  • 3 teaspoons - Baking Powder
  • ¾ tsp - Pumpkin Pie Spice
  • ¼ tsp - Salt
  • 1 tbsp - Sugar
  • 3 - Eggs
  • 1 ¾ cups - Milk
  • ½ cups - Vegetable Oil
  • ½ cups - Pumpkin canned
  • ½ cups - Pecans

Instructions

  1. In a medium-sized bowl, sift the flour, baking powder, pumpkin pie spice, salt, and sugar.
  2. In a separate bowl, beat the egg yolks.
  3. Beat the milk, vegetable oil, pumpkin, and pecans into the egg yolks.
  4. Add the egg mixture to the flour mixture and stir just until mixed. Batter will be lumpy.
  5. Beat the egg whites until they form short, moist peaks.
  6. Fold the egg whites into the pumpkin mixture.
  7. Bake in preheated waffle iron until done.
