Instructions
1
In a large bowl, whisk the eggs until slightly frothy. Add quark, sugar, and vanilla extract and mix until smooth and creamy. Stir in flour and baking powder. Mix just until well combined.
2
Heat neutral oil in a deep pot to about 170–175°C (340–350°F). The oil is ready when a small piece of dough rises to the surface and bubbles gently.
3
Transfer the dough into a piping bag for easier portioning. Dip a pair of scissors into the hot oil (this prevents sticking), then pipe small portions of dough directly into the oil and cut them off with the scissors. Alternatively, you can use two teaspoons to scoop and drop the dough into the oil if you prefer.
4
While still warm, roll the donut bites in sugar until fully coated.
5
Enjoy plain or dip into warm pistachio cream, melted chocolate, or any topping you prefer.

Tips & Tricks (5)
- Room Temperature Quark is Essential 🌡️Use quark at room temperature and gently fold it into your batter to maintain airiness; cold quark can deflate the mixture and result in dense, heavy bites instead of fluffy ones.
- Sugar Coat While Still Warm ✨Roll the donut bites in sugar immediately after frying while they're still hot; the residual moisture creates an adhesive coating that prevents the sugar from sliding off.
- Double-Dip Technique for Coating 🍫Dip each bite into melted chocolate or pistachio cream, let it set for 30 seconds, then dip again for a luxurious, professional-looking double coating that won't drip off.
- Batter Consistency Over-Mixing Prevention 🥄Fold ingredients gently by hand rather than using a mixer; over-mixing develops gluten and deflates air pockets, resulting in tough, compact bites instead of airy ones.
- Oil Temperature Stability 🔥Maintain oil at 350°F (175°C) using a thermometer; too hot causes burnt exteriors with raw centers, while too cool results in greasy, soggy bites that absorb excess oil.
