Quarkbällchen Donut Bites
Soft, fluffy on the inside and perfectly golden on the outside, these Quarkbällchen Donut Bites are a classic German-style treat made incredibly simple. Rolled in sugar while still warm and dipped in melted chocolate or pistachio cream, they’re light, airy, and dangerously addictive.

Ingredients
- 3 - large eggs
- 1 cup - quark
- ⅔ cup - sugar
- 1 ¾ teaspoons - baking powder
- 1 tsp - vanilla extract
- 2 cups - all-purpose flour
- ⅓ cup - sugar
- warm pistachio cream
- melted chocolate
Instructions
- In a large bowl, whisk the eggs until slightly frothy. Add quark, sugar, and vanilla extract and mix until smooth and creamy. Stir in flour and baking powder. Mix just until well combined.
- Heat neutral oil in a deep pot to about 170–175°C (340–350°F). The oil is ready when a small piece of dough rises to the surface and bubbles gently.
- Transfer the dough into a piping bag for easier portioning. Dip a pair of scissors into the hot oil (this prevents sticking), then pipe small portions of dough directly into the oil and cut them off with the scissors. Alternatively, you can use two teaspoons to scoop and drop the dough into the oil if you prefer.
- While still warm, roll the donut bites in sugar until fully coated.
- Enjoy plain or dip into warm pistachio cream, melted chocolate, or any topping you prefer.
