Instructions
1

Cook the quinoa: Cook 2/3 cup uncooked quinoa in water, according to package directions. You can also use 2 cups precooked quinoa. See notes for alternative cooking options.
2
|
Make the dressing: In a small bowl, whisk mint, lime juice and honey until well mixed.
3
|
Put it together: In a large bowl, combine cooked quinoa with all the fruit (strawberries, blueberries, kiwi, mandarins & bananas), then pour the dressing over the top and combine until well mixed. Serve immediately, or prepare up to 6 hours in advance for best appearance.

|
Storage: The leftovers will keep for up to 4 days; however the strawberries will start to bleed into the quinoa and the bananas will get a bit mushy, but it will still taste good.

Tips & Tricks (5)
- Cook Quinoa Ahead for Better Texture 🍚Prepare quinoa the day before and refrigerate it to allow the grains to firm up, preventing a mushy salad when combined with juicy fruits.
- Add Bananas Last Minute 🍌Cut and add bright yellow bananas just before serving to prevent browning and oxidation, keeping your salad visually stunning and fresh.
- Infuse Mint into the Dressing 🌿Gently muddle fresh mint leaves with honey and lime juice 10 minutes before mixing to release essential oils and create a more fragrant, flavorful dressing.
- Pat Berries Dry for Longevity 🫐Gently pat blueberries and strawberries dry with paper towels before adding to prevent excess moisture from diluting the dressing and making the salad soggy.
- Toss Just Before Service ✨Keep components separate until serving time, then toss gently with dressing to maintain distinct fruit textures and prevent the salad from becoming watery and compressed.
