Ramen Stir Fry– this easy dinner recipe is perfect for nights when you CAN’T be bothered to spend more than 10 minutes making dinner. Easy and delicious ramen stir fry that's vegan and SO GOOD! This is really just a base recipe so feel free to swap in other ingredients or even fresh vegetables if you’re feeling fancy.

Ingredients
- ¼ cup - soy sauce
- 1 tbsp - cornstarch
- ¼ cup - broth
- 1 tbsp - rice vinegar
- 2 tablespoons - maple syrup
- 3 cloves - garlic
- 1 tsp - ginger
- 2 packs - ramen
- 1 ½ tablespoons - toasted sesame oil
- ⅓ cup - green onions
- 1 cup - frozen vegetables
- extra green onion and sesame seeds for garnish
Instructions
- Cook the noodles according to packet instructions.
- While the noodles cook, whisk together all of the sauce ingredients.
- In a large pan, heat the oil over medium heat. Once hot, add in the frozen veggies and green onion and saute until thoroughly heated through, about 8 minutes.
- Add the stir fry sauce and cook for a couple of minutes until it begins to thicken. Add in the noodles and toss so that everything is coated in the sauce.
- Serve and enjoy!!
