Instructions
1
Place a cooling rack over a baking tray and set near the fryer.
2
Heat your frying oil in a dutch oven on medium heat and monitor the temperature with a candy thermometer to make sure it reaches the desired level of 350F.
3
Enlarge each biscuit by stretching it at least 1 to 2 inches wider.
4
Once oil has reached the desired temperature, fry each donut separately for approximately 1 minute on each side until they turn golden brown.
5
Place every fried donut on the cooling rack so that any extra oil can drain away.
6
Fill the center of each donut with approximately 2 tablespoons of jelly using either a piping bag or baking syringe. Place the filled donuts back on the cooling rack and repeat the process for all the donuts.
7
Sprinkle powdered sugar on top of each donut, then turn them over and repeat on the other side.

Tips & Tricks (5)
- Chill Biscuit Dough Before Cutting 🧊Refrigerate your biscuit dough for 15-20 minutes before cutting out donut shapes to prevent sticking and ensure clean, uniform cuts that fry evenly.
- Use a Piping Bag for Precise Filling 🎯Transfer your raspberry jelly to a piping bag with a small round tip to inject filling directly into the center of each donut, preventing overfilling and mess.
- Double-Coat for Maximum Sweetness ✨While donuts are still warm, coat them in powdered sugar, let cool slightly, then dip again for a luxurious, bakery-quality double sugar crust that won't fall off.
- Maintain Oil Temperature at 350°F 🌡️Use a deep-fry or candy thermometer to keep oil at exactly 350°F—too hot burns the exterior while the inside stays raw, too cool creates greasy donuts.
- Strain Jelly for Smooth Texture 🍓Press your raspberry jelly through a fine-mesh sieve before filling to remove seeds and pulp, creating a silky smooth filling that won't clog your piping bag.
