Instructions
1
|
Place a cooling rack over a baking tray and set near the fryer.
2
|
Heat your frying oil in a dutch oven on medium heat and monitor the temperature with a candy thermometer to make sure it reaches the desired level of 350F.
3
|
Enlarge each biscuit by stretching it at least 1 to 2 inches wider.
4
|
Once oil has reached the desired temperature, fry each donut separately for approximately 1 minute on each side until they turn golden brown.
5
|
Place every fried donut on the cooling rack so that any extra oil can drain away.
6
|
Fill the center of each donut with approximately 2 tablespoons of jelly using either a piping bag or baking syringe. Place the filled donuts back on the cooling rack and repeat the process for all the donuts.
7
|
Sprinkle powdered sugar on top of each donut, then turn them over and repeat on the other side.

Tips & Tricks (5)
- Chill Your Biscuit Dough 🧊Refrigerate the biscuit dough for at least 30 minutes before cutting and frying to prevent it from spreading and ensure fluffy, tender donuts with distinct layers.
- Use a Piping Bag for Jelly 🎯Fill donuts with jelly using a small piping bag with a long tip inserted into the side—this prevents leakage and ensures even distribution of filling throughout the donut.
- Maintain Oil Temperature 🌡️Keep your frying oil at a consistent 350°F using a thermometer; too hot and the outside burns before the inside cooks, too cool and you'll get greasy, dense donuts.
- Dust While Still Warm ✨Apply powdered sugar immediately after frying while the donuts are still warm—the heat helps the sugar adhere better and creates a beautiful, even coating that won't clump.
- Choose Seedless Jam for Smoothness 🫐Use seedless raspberry jelly or strain regular jam through a fine sieve to prevent seeds from clogging your piping tip and to create a silkier, more luxurious filling.
