Instructions

Add raspberries, soy milk, yogurt, maple syrup, and vanilla to a blender. Blend until smooth. Pour into a small bowl and stir in chia seeds. Let sit for 10 minutes, then stir again. Place in the fridge for at least 4 hours or overnight.

When chia pudding is ready, add frozen mango and soy milk to the blender. Blend until smooth and creamy. The texture should be very thick. See notes if using fresh mango.

In a jar or serving bowl, layer the chia pudding with mango smoothie and yogurt. Top with more raspberries, mango, shredded coconut, and/or granola. Enjoy!
