Instructions
1
First, preheat your oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper.
2
In a large mixing bowl or the bowl of a stand mixer, add the butter, sugar, and brown sugar. Beat until smooth and creamy.
3
Then, add in the egg, egg yolk, and vanilla. Beat until combined.
4
Sift in the flour and baking soda. Stir until a cookie dough forms.
5
Then, add in the rice cereal. Stir together.
6
Use an ice cream scoop to scoop out balls of dough. Use your thumb to create an indent in the middle of each dough ball. Place 4 to 5 marshmallows in it.
7
Then, use your fingers to fully enclose the marshmallows with cookie dough. Roll the dough ball around in a shallow bowl of rice cereal until fully coated. Place at least 3 inches apart on the pan.
8
Bake for 9 to 11 minutes, until the edges are lightly golden brown and the marshmallow has melted.
9
Finally, remove from the oven. Cool on the pan for 10 minutes before carefully transferring to a cooling rack.

Tips & Tricks (5)
- Toast Your Rice Krispies First 🥣Lightly toast the cereal in a dry skillet for 2-3 minutes before mixing to intensify its crunch and nutty flavor, preventing soggy cookies.
- Freeze Marshmallows Before Stuffing 🧊Place mini marshmallows in the freezer for 15 minutes before adding to dough; they'll hold their shape better and create perfect gooey pockets when baked.
- Use Both Sugars for Optimal Texture 🍬The granulated sugar creates crispness while brown sugar adds moisture and chewiness—don't skip either, as this balance defines the cookie's signature texture.
- Don't Overmix Your Dough 🚫Mix only until ingredients just combine after adding the cereal; overmixing activates gluten even in gluten-free flour and creates tough, dense cookies instead of light and crispy ones.
- Cool on the Pan First 🛑Let cookies rest on the baking sheet for 5 minutes before transferring to a cooling rack; this allows marshmallows to set slightly and prevents cookies from falling apart.
