Instructions
1
|
Preheat your oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper.
2
|
Spread the cauliflower florets, chopped dates, and sliced red onion on the baking sheet. Drizzle with a little olive oil and toss to coat.
3
|
Roast the vegetables in the preheated oven for 20-25 minutes, or until the cauliflower is tender and lightly browned.
4
|
Remove the baking sheet from the oven and place the roasted vegetables on a bed of the greens.
5
|
Drizzle the tahini sauce over the vegetables and serve immediately.
Tahini sauce
1
|
In a small mixing bowl, add the tahini, lemon juice, salt, pepper, and cumin.
2
|
Stir them together. The mixture might become very thick or look "clumped" at first; this is normal.
3
|
Add the ice water one tablespoon at a time, whisking constantly.
4
|
Continue adding water until the sauce reaches a smooth, pourable consistency (similar to a heavy cream or a thin yogurt).

Tips & Tricks (5)
- Cauliflower Roasting Technique 🔥Cut cauliflower into uniform-sized florets to ensure even roasting and crispy edges. Pat the florets completely dry before roasting to achieve maximum caramelization.
- Tahini Sauce Balance 🥄Whisk tahini sauce until smooth, adding ice water gradually to prevent separation and create a perfect creamy consistency. The key is to add water slowly while mixing continuously.
- Date Preparation Hack 🍇Chop dates finely and let them come to room temperature before adding to the dish to enhance their natural sweetness and prevent clumping.
- Onion Mellowing Trick 🧅Quick-pickle red onions in lemon juice for 10 minutes before adding to the dish to soften their sharp bite and add a bright, tangy dimension.
- Spice Layer Mastery 🌶️Toast cumin briefly in a dry pan before grinding to release its essential oils and deepen the spice's nutty, complex flavor profile.
