Instructions
1
|
Preheat the oven to 350℉. Line a baking tray with parchment paper or a silicone baking mat, or use a casserole dish. Set aside.
2
|
Cut the rind off of the pineapple, then cut into rings or slices, removing the hard core from each piece.
3
|
In a large zipper bag, or bowl, combine the brown sugar and cinnamon.
4
|
Add each pineapple slice to the bag or bowl, and shake to coat completely.
5
|
Place the cinnamon sugar-coated pineapple slices on the baking tray or casserole dish.
6
|
Repeat with all pineapple slices.
7
|
Bake for 20 minutes, or until brown sugar has completely melted and appears to have lightly caramelized on the pineapple.

Tips & Tricks (5)
- Choose the Right Pineapple Ripeness 🍍Select a pineapple that yields slightly to pressure with a golden-yellow color and sweet aroma—overripe fruit will caramelize too quickly and become mushy during roasting.
- Create a Compound Glaze for Depth 🤎Mix brown sugar with melted butter before adding cinnamon to ensure even distribution and prevent the cinnamon from clumping or burning on the fruit's surface.
- Score the Pineapple Flesh Strategically ✂️Cut shallow diagonal crosshatches into the pineapple flesh without piercing the skin to allow the glaze to penetrate while maximizing caramelization on the exposed surfaces.
- Toast Your Cinnamon First 🌟Briefly warm the cinnamon in a dry pan before mixing with brown sugar to unlock its essential oils and intensify its complex, warm flavor profile against the bright fruit.
- Finish with High Heat for Char 🔥Increase oven temperature to 425°F in the final 2-3 minutes to create a caramelized, slightly charred exterior that contrasts beautifully with the juicy, tender interior.
