Ingredients

  • 2 tablespoons - olive oil
  • 1 - onion
  • 1 - jalapeno
  • 3 clove - garlic
  • 1 ½ teaspoons - cumin
  • 1 tbsp - chipotle chili powder
  • 4 cups - chicken broth
  • 20 ounces - diced tomatoes
  • 6 ounces - diced tomatoes with diced chilis
  • 14 ounces - black beans
  • 2 cups - shredded rotisserie chicken
  • 1 ½ cups - corn
  • 1 tsp - salt
  • 1 tsp - pepper
  • tortilla strips
  • sour cream
  • cheese
  • lime wedges

Instructions

  1. Warm up the olive oil in a soup pot or dutch oven on medium heat.
  2. Stir the minced onion into the hot oil and continue stirring occasionally until it turns a light golden color.
  3. Add the minced jalapeno, minced garlic, cumin and chipotle chili powder and stir for 60 seconds.
  4. Add in the chicken broth, tomatoes, diced tomatoes with chiles, black beans, chicken, corn and salt and pepper to the pot.
  5. Raise the temperature to medium-high and allow the broth to come to a simmer.
  6. Simmer for 10 minutes, taste and adjust seasoning if needed.
  7. Top with your favorite toppings.
