Tips & Tricks (5)
- Bloom Your Tomato Paste 🍅Toast the tomato paste in butter or olive oil for 1-2 minutes before adding other ingredients to deepen its umami flavor and reduce any metallic taste.
- Layer Fresh and Dried Herbs 🌿Add dried oregano and basil early in cooking for depth, then stir in fresh herbs during the final 2 minutes to preserve their vibrant flavor and aroma.
- Balance Acidity with Brown Sugar 🍯Start with a small pinch of brown sugar and taste as you go—San Marzano tomatoes vary in acidity, so adjust sweetness gradually to avoid an overly sweet sauce.
- Simmer Low and Slow 🔥Keep the sauce at a gentle simmer (not rolling boil) for 15-20 minutes to allow flavors to meld and water to evaporate, resulting in a concentrated, cohesive taste.
- Finish with Cold Butter 🧈Stir in a knob of cold butter at the end of cooking to create a silky texture, add richness, and help the sauce coat pizza dough evenly.
