1/2
Sheet Pan Mini Meat Loaves
Instructions
1
Preheat the oven to 375°F.
2
Spray a large baking sheet with nonstick cooking spray. Set aside.
3
In a small bowl, whisk the egg.
4
In a large mixing bowl, mix together the onion, garlic, ketchup, cheese, and basil. Add the whisked egg and stir. Add the beef, and mix together with a spoon or your hands until well combined.
5
Divide the meat mixture into 4 equal portions and shape into miniature loaves. Arrange the loaves on the prepared baking sheet. In a small bowl, whisk together the ketchup, apple cider vinegar and brown sugar. Spoon the sauce evenly over the loaves.
6
Bake the meat loaves on middle rack of oven for 15 minutes.
7
While meat loaves are baking, wash, dry and trim the asparagus. Toss the asparagus with the olive oil and salt. Remove baking sheet from the oven, and nestle the asparagus around the loaves. Continue baking until meat loaves are cooked through, about 15 minutes.
8
Check to see that meat loaves are done. Remove from oven or add time as needed.
9
Plate each meat loaf with a portion of asparagus and serve immediately.

Tips & Tricks (5)
- Mix Ground Beef Gently 🧈Handle the meat mixture minimally when combining with egg, cheese, and seasonings to avoid compacting it, which results in dense, tough mini loaves instead of tender, fluffy ones.
- Create a Glaze Sweet Spot 🍯Combine brown sugar and apple cider vinegar with ketchup, then apply halfway through cooking to prevent burning while allowing the glaze to caramelize and develop complex flavor.
- Stagger Asparagus Timing ⏱️Add asparagus to the sheet pan 12-15 minutes after the mini loaves start cooking so both components finish simultaneously without the vegetables becoming mushy or undercooked.
- Use an Instant-Read Thermometer 🌡️Insert the thermometer into the center of the largest mini loaf to confirm it reaches 160°F for food safety, ensuring perfectly cooked meat without guesswork.
- Oil and Line Your Pan Strategically 🛢️Apply nonstick spray generously and consider using parchment paper to prevent sticking and enable easy cleanup while allowing the bottom of the loaves to brown slightly for added depth.
