From the Cook
1/2
Sheet Pan Sesame Chicken and Broccoli
Instructions
1
Preheat the oven to 375°F.
2
Line a large baking sheet with parchment paper. Arrange the chicken and broccoli florets on the baking sheet and drizzle with sesame oil. Toss with a rubber spatula to coat.
3
Bake the chicken and broccoli on middle rack of oven for 15 minutes. While chicken and broccoli bake, prepare the sauce.
4
Whisk together the water and cornstarch in a small saucepan until smooth. Add the soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger root. Whisk to combine.
5
Set the pan over medium heat and bring the sauce to a low boil, whisking regularly. Once bubbling, whisk the sauce steadily until it begins to thicken slightly, 1-2 minutes. Remove pan from the heat and set aside.
6
Open the oven and remove the baking sheet. Pour the sauce evenly over the chicken and broccoli. Toss with a rubber spatula to coat, and sprinkle with the sesame seeds. Return baking sheet to oven and continue baking the chicken and broccoli until chicken is cooked through and broccoli is fork-tender, 10-12 minutes.
7
Check to see that the dish is done. Remove from oven or add time as needed.
8
Transfer the chicken and broccoli to serving dishes and top with the finely chopped scallions. Serve immediately.

Tips & Tricks (5)
- Pat Dry for Perfect Caramelization 💧Pat chicken breasts completely dry with paper towels before seasoning to remove surface moisture, allowing the sesame coating to adhere better and achieve a golden, crispy exterior on the sheet pan.
- Cut Broccoli Uniformly for Even Cooking 🥦Cut broccoli florets to roughly the same size and thickness so they roast evenly; smaller pieces cook faster than larger ones, preventing some from burning while others remain undercooked.
- Toast Sesame Seeds Before Serving ✨Lightly toast the sesame seeds in a dry skillet just before serving to amplify their nutty flavor and create a more vibrant finishing touch than raw seeds.
- Temper the Sauce Temperature 🔥Let your cornstarch slurry and sauce come to room temperature before tossing with hot chicken and broccoli to prevent the sesame oil from breaking down and losing its delicate toasted aroma.
- Arrange for Air Circulation 📍Space chicken breasts and broccoli in a single layer without crowding the sheet pan to allow heat to circulate evenly; cook in batches if needed rather than overcrowding, ensuring crispy textures instead of steamed results.
