Ingredients

  • 1  - English cucumber
  • 4  - roma tomatoes
  • 1  - green bell pepper
  • ½  - red onion
  • ½ cup - fresh mint
  • ½ cup - fresh parsley
  • ¼ cup - fresh dill
  • 2  - limes
  • 3 tablespoons - olive oil
  •   - Salt and pepper

  1. Add all of the diced vegetables into a large bowl and stir to combine. Fold in fresh herbs, zest and juice of the limes and stir.
  2. Drizzle in olive oil to lightly dress. Add salt and pepper to taste, and serve.
  3. This salad can easily be made ahead, as the flavors come together once it’s chilled for an hour or two.
