Polenta
1
Bring water to a boil in a pot. Stir in polenta, bring back to a boil briefly, remove from heat and let stand, covered, for 10 minutes.
Shrimp and Asparagus Stir Fry
1
Meanwhile, wash the asparagus, trim off the woody ends, and cut the stalks into bite-sized pieces. (The thicker the stalks, the smaller the pieces should be.)
2
Heat 1 teaspoon of oil in a skillet. Add the asparagus and sauté over medium-high heat for about 5 minutes, tossing or turning occasionally
3
Meanwhile, peel and finely chop the garlic. Rinse the shrimp under cold water and pat dry.
4
Once the asparagus has developed a nice golden sear, push it to the sides of the skillet and add the remaining 1 teaspoon of oil, the garlic, and the shrimp to the center. Toss everything together and sauté over medium heat for 3–4 minutes, stirring or shaking the pan occasionally so everything cooks evenly.
Serve
1
Stir the butter and Parmesan into the polenta, and season with salt and pepper to taste.
2
Season the asparagus and shrimp skillet with salt, pepper, and the juice of half a lemon. Divide the polenta between two plates and top with the shrimp and asparagus.

Tips & Tricks (5)
- Dry Your Shrimp Thoroughly 🍤Pat shrimp completely dry with paper towels before cooking to ensure a golden sear and prevent them from steaming in their own moisture, which creates a better texture and browning.
- Snap Your Asparagus Correctly 💚Hold each asparagus spear and gently bend until it naturally snaps at the tender point, removing tough woody ends—this ensures every bite is tender and prevents chewy, fibrous pieces in your dish.
- Emulsify Butter with Lemon for Silky Sauce ✨Whisk fresh lemon juice with cold butter off-heat to create a light emulsion that coats the shrimp and asparagus beautifully, adding richness while maintaining the dish's bright, springy character.
- Cook Polenta Ahead for Efficiency ⏱️Prepare polenta 15-20 minutes before serving and keep it warm on low heat, allowing you to focus entirely on the shrimp and asparagus timing so everything reaches the table hot and perfectly cooked.
- Season Shrimp Just Before Cooking 🧂Salt and pepper shrimp only moments before they hit the hot pan to prevent moisture loss and maintain their tender, delicate texture while still developing a flavorful crust.
