1/5
Shrimp Fettuccine Alfredo
Instructions
1
Season shrimp with salt, pepper, paprika, garlic powder, and onion powder.
2
Heat 1 tbsp olive oil in a skillet over medium heat. Cook shrimp for 2–3 minutes per side, until pink and opaque. Set aside.
3
Bring salted water to a boil and cook fettuccine until al dente. Reserve 1/4 cup pasta water and drain the rest.
4
In a large pan, melt 3 tbsp butter with 1 tbsp olive oil. Add minced garlic and sauté until fragrant, about 1 minute.
5
Pour in heavy cream and bring to a simmer. Reduce heat and stir in Parmesan cheese until melted and the sauce thickens slightly.
6
Add cooked pasta and reserved pasta water. Toss to combine, then fold in shrimp.
7
Serve hot, topped with more Parmesan and freshly chopped parsley.

Tips & Tricks (5)
- Dry Your Shrimp Before Searing 💧Pat shrimp completely dry with paper towels before cooking to ensure a golden crust and prevent steaming; moisture prevents proper browning and creates a less appetizing texture.
- Use Pasta Water as Sauce Magic ✨Reserve at least 1 cup of starchy pasta water before draining, then add it gradually to your Alfredo sauce to achieve the perfect silky consistency and help the sauce cling to the fettuccine beautifully.
- Temper Your Cream with Pasta Water 🔥Always add hot pasta water to your cream and cheese mixture rather than cold liquid to prevent the cream from breaking and ensure a smooth, luxurious sauce that won't separate.
- Toast Your Garlic in Butter First 🧈Infuse the butter with minced fresh garlic for 30-60 seconds over medium heat before adding cream to develop rich, mellow garlic flavor that's far superior to using garlic powder alone.
- Add Parmesan Off Heat to Prevent Graininess 🧀Remove the sauce from heat before stirring in grated Parmesan cheese to prevent it from clumping or becoming grainy; the residual heat will melt it perfectly while preserving the creamy texture.
