Shrimp Mango Salsa Tacos are a decadent and healthy way to have your favorite taco tuesday dinners. Shrimp is high in protein and cooks in minutes. The mango and peach salsa is sweet and a little spicy and is a perfect accompaniment. This Shrimp Mango Salsa Tacos are a really quick meal. You can do all the prep in advance and then have dinner on the table in mere minutes.

Ingredients
- 1 tbsp - olive oil
- Corn tortillas
- 1 ½ pounds - shrimp
- 1 ½ cups - Coleslaw mix
- ¼ - red pepper
- ¼ - yellow pepper
- ½ cup - Greek yogurt or mayo
- 1 tbsp - sugar
- 1 tbsp - vinegar
- Salt and pepper
- 1 cup - mango
- 1 cup - fresh peaches
- ¼ cup - red onion
- ¼ cup - red bell pepper
- 2 tablespoons - jalapeno
- 1 - lime
- 2 tablespoons - cilantro
- 1 tbsp - garlic
Instructions
- Place all the ingredients for the salsa in a small bowl or jar and refrigerate for at least one hour.
- Blend 1 cup peach and mango salsa in a blender until no chunks remain. Add shrimp and blended salsa to a glass container or ziploc bag. Allow to marinate for 15-20 minutes.
- Meanwhile, in a separate bowl, combine Greek yogurt or mayo, sugar, vinegar, and salt and pepper. Add coleslaw mix and thinly sliced peppers and stir to coat the coleslaw.
- Remove shrimp from marinade and saute in 1 Tbsp oil in a pan over medium heat. Cook for 2-3 minutes. Serve immediately.
- Assemble tacos with a few shrimp, coleslaw mix, and additional salsa, if desired.
