Shrimp Mango Salsa Tacos

Shrimp Mango Salsa Tacos are a decadent and healthy way to have your favorite taco tuesday dinners. Shrimp is high in protein and cooks in minutes. The mango and peach salsa is sweet and a little spicy and is a perfect accompaniment. This Shrimp Mango Salsa Tacos are a really quick meal. You can do all the prep in advance and then have dinner on the table in mere minutes.

Ingredients

  • 1 tbsp - olive oil
  • Corn tortillas
  • 1 ½ pounds - shrimp
  • 1 ½ cups - Coleslaw mix
  • ¼ - red pepper
  • ¼ - yellow pepper
  • ½ cup - Greek yogurt or mayo
  • 1 tbsp - sugar
  • 1 tbsp - vinegar
  • Salt and pepper
  • 1 cup - mango
  • 1 cup - fresh peaches
  • ¼ cup - red onion
  • ¼ cup - red bell pepper
  • 2 tablespoons - jalapeno
  • 1 - lime
  • 2 tablespoons - cilantro
  • 1 tbsp - garlic

Instructions

  1. Place all the ingredients for the salsa in a small bowl or jar and refrigerate for at least one hour.
  2. Blend 1 cup peach and mango salsa in a blender until no chunks remain. Add shrimp and blended salsa to a glass container or ziploc bag. Allow to marinate for 15-20 minutes.
  3. Meanwhile, in a separate bowl, combine Greek yogurt or mayo, sugar, vinegar, and salt and pepper. Add coleslaw mix and thinly sliced peppers and stir to coat the coleslaw.
  4. Remove shrimp from marinade and saute in 1 Tbsp oil in a pan over medium heat. Cook for 2-3 minutes. Serve immediately.
  5. Assemble tacos with a few shrimp, coleslaw mix, and additional salsa, if desired.
