Simple Baked Chicken Legs
Instructions
1
Preheat the oven to 375°F.
2
Line a baking sheet with aluminum foil. Spray with nonstick cooking spray and set aside.
3
Place the chicken in a large mixing bowl and season with the salt and pepper. Add the olive oil, garlic powder, and paprika. Toss with a rubber spatula to thoroughly coat the chicken in oil and seasonings.
4
Arrange the chicken legs on the prepared baking sheet.
5
Roast the chicken on middle rack of oven until it is slightly brown, 20-30 minutes.
6
Set the oven to broil. Broil the chicken until skin is caramelized and meat has reached an internal temperature of 165°F, 3-5 minutes. Keep a close eye on the chicken to ensure it does not burn.
7
Check to see that chicken is done. Remove from oven or add time as needed.
8
Transfer chicken legs to a plate and serve immediately.

Tips & Tricks (5)
- Pat Dry for Crispy Skin 🎯Pat the chicken drumsticks completely dry with paper towels before seasoning; this removes surface moisture and allows the skin to crisp up beautifully in the oven instead of steaming.
- Bloom Your Spices in Oil 🫒Mix your paprika and garlic powder with the extra-virgin olive oil for 2-3 minutes before applying to the chicken; this releases their essential oils and intensifies the flavor dramatically.
- Elevate on a Wire Rack 📍Place drumsticks on a wire rack set over your baking sheet instead of directly on the pan; this allows hot air to circulate underneath for even browning and crispier skin on all sides.
- Season in Two Stages ✨Apply half your seasoning 30 minutes before baking and the remainder after the drumsticks have been in the oven for 15 minutes; this creates a more complex, layered flavor profile.
- Use Instant-Read Thermometer for Precision 🌡️Check for doneness at the thickest part of the thigh (165°F internal temperature) rather than relying on appearance; this guarantees perfectly cooked, juicy meat every time.
