Instructions
1
In a small bowl, combine the salt, pepper, smoked paprika and cumin and sprinkle evenly over the pieces of pork.
2
Place the diced onion and garlic in the bottom of the slow cooker, then place the pieces of pork over the top.
3
Pour the beer over the pork and cook on low for 8-10 hours or high for about 6 hours or until tender enough to shred easily.
4
Remove the pork from the slow cooker and place in a large bowl. Shred with two forks and discard any large pieces of fat. Season with salt and pepper, to taste, then add some of the liquid from the slow cooker for added moisture as necessary. Enjoy!

Tips & Tricks (5)
- Sear the Pork Shoulder First 🔥Brown the pork shoulder in a hot skillet before adding to the slow cooker to develop a flavorful crust and deeper, more complex taste through the Maillard reaction.
- Choose the Right Beer Pairing 🍺Use a darker beer like porter or stout for richer, more sophisticated flavors, or a lighter lager for a cleaner taste—avoid overly hoppy IPAs that can become bitter when reduced.
- Toast Your Spices First ✨Lightly toast the ground cumin and smoked paprika in a dry skillet for 30 seconds before adding to intensify their aromatic oils and prevent a raw, dusty flavor.
- Drain Excess Liquid Before Shredding 💧Reserve the cooking liquid separately, then shred the pork and add back only the amount needed to keep it moist—this prevents watery, bland pulled pork and gives you control over the final consistency.
- Finish with a Quick Sauce Reduction 🎯Simmer the reserved cooking liquid in a saucepan for 5-10 minutes to concentrate flavors and create a rich sauce that coats the shredded pork perfectly without excess moisture.
