Tips & Tricks (5)
- Dry Your Steaks Thoroughly 🏜️Pat steaks completely dry with paper towels before seasoning to ensure a golden, caramelized crust that locks in juices and develops deep umami flavors.
- Brown Steaks First, Remove, Then Build Gravy 🍳Sear steaks in butter and oil until deeply browned, then set aside before making the gravy—this prevents the meat from overcooking while you develop rich fond in the pan.
- Caramelize Onions and Garlic Slowly 🧅Cook onions and garlic over medium heat for 3-4 minutes until golden and fragrant, allowing their natural sugars to release for a sweeter, more complex gravy base.
- Deglaze with Beef Stock for Maximum Flavor 🥘Pour beef stock into the hot pan to scrape up all the caramelized browned bits (fond), which contain concentrated umami that transforms your gravy from ordinary to extraordinary.
- Temper Heavy Cream to Prevent Breaking 🍶Slowly whisk heavy cream into the warm gravy off-heat or at low temperature to prevent curdling, ensuring a silky, luxurious sauce that perfectly coats the steaks.
