  • 3 tablespoon - butter

  • 1 cup - heavy cream
  • ½ cup - Parmesan cheese
  • ½ teaspoon - salt
  • ¼ teaspoon - black pepper

  • ½ teaspoon - onion powder
  • ½ teaspoon - dried parsley
  •   - Reserved pasta water

  1. Cook pasta in salted boiling water until al dente. Reserve 1 cup pasta water and drain the rest.
  2. In a pan over medium heat, melt butter with a dash of olive oil.
  3. Add minced garlic and cook until fragrant.
  4. Stir in tomato paste and cook for a few minutes until darkened in color.
  5. Deglaze the pan with vodka and stir to combine.
  6. Pour in heavy cream and whisk until smooth. Simmer for 7–10 minutes to cook off the alcohol.
  7. Season with salt, black pepper, garlic powder, onion powder, and parsley.
  8. Stir in Parmesan cheese until melted.
  9. Add cooked pasta and a splash of pasta water. Mix until creamy and well combined.
  10. Top with additional Parmesan before serving.
