Tips & Tricks (5)
- Bloom Your Tomato Paste 🍅Sauté the tomato paste in butter for 1-2 minutes before adding other ingredients to deepen its flavor and eliminate any metallic taste, creating a richer sauce foundation.
- Vodka Flambe for Best Results 🔥After adding vodka, let it simmer for 2-3 minutes to allow the alcohol to cook off completely while concentrating its subtle flavor complexity into the sauce.
- Starchy Water is Your Secret Weapon 💧Reserve pasta water before draining and use it gradually to adjust sauce consistency—the starch helps emulsify the cream and butter into a silky, glossy coating that clings beautifully to snowflake shapes.
- Temper Your Cream Properly 🥛Add heavy cream slowly to the hot sauce off-heat or at reduced temperature, then warm gently while stirring to prevent curdling and ensure a smooth, luxurious texture.
- Finish with Fresh Garlic 🧄Reserve some minced fresh garlic to stir in just before serving alongside the dried parsley—this adds bright, aromatic notes that contrast beautifully with the rich, cooked garlic in the sauce.
