Instructions
1
|
Preheat the oven to 350℉. Line baking sheets with parchment paper.
2
|
In a large bowl using a handheld electric mixer on medium speed, cream together the butter, vanilla pudding mix, and brown sugar. Add the vanilla and eggs and beat on medium speed until fluffy.
3
|
Whisk together the flour, baking soda, and salt in a medium-sized bowl. Add to the wet ingredients and mix at low speed until just combined. Fold in the chocolate chips and chopped pecans.
4
|
Scoop the dough by medium-sized cookie scoop onto the prepared baking sheet, placing each cookie 2 inches apart. Top each cookie with a few extra chocolate chips and pecans, if desired. Bake, one pan at a time, in the preheated oven for 10-12 minutes or until slightly golden around the edges. Let cool on the pan for 5 minutes before transferring to a wire rack to finish cooling. Bake the remaining cookies. Enjoy!

Tips & Tricks (5)
- Pudding Mix Magic 🍮The instant vanilla pudding mix is the secret weapon that ensures ultra-soft, tender cookies with incredible moisture and texture.
- Chill for Success 🧊Refrigerate the cookie dough for at least 1 hour before baking to prevent spreading and develop deeper, richer flavors.
- Pecan Perfection 🥜Toast the pecans briefly in a dry skillet before chopping to enhance their nutty flavor and add a delightful crunch to the cookies.
- Chocolate Chip Distribution 🍫Reserve a handful of chocolate chips to press into the top of each cookie dough ball before baking for a more visually appealing and evenly distributed chocolate effect.
- Butter Temperature Trick 🧈Use room temperature butter that's softened but still slightly cool to the touch for the perfect cookie texture and optimal cream-ability with sugars.
