Tips & Tricks (5)
- Drain and Cool Pasta Properly 🍝Slightly undercook the spaghetti by 1-2 minutes, then toss with a light coating of olive oil to prevent sticking and clumping before layering into the pie dish.
- Create a Binding Custard 🥚Whisk eggs thoroughly with ricotta and half the parmesan before mixing with pasta—this creates a creamy custard that holds the pie together perfectly during baking and slicing.
- Brown Turkey for Deeper Flavor 🍖Don't just crumble the ground turkey; let it develop a golden crust in batches before adding aromatics, which builds rich umami flavors that elevate the entire dish.
- Layer Strategy for Even Cooking 🎨Alternate layers of pasta mixture, meat sauce, and cheese, finishing with mozzarella on top to ensure even heat distribution and a golden, bubbly crust throughout.
- Rest Before Slicing 🕐Let the baked pie rest for 10-15 minutes after coming out of the oven—this sets the custard and prevents it from falling apart when you cut clean, impressive slices.
