Preheat the oven to 400°F (200°C) with top and bottom heat. Clean the mushrooms and tear them into smaller pieces by hand. Slice the leek lengthwise, remove the outer layer, rinse thoroughly, and cut into thin half-moons. Peel and finely chop the garlic.

Heat the oil in a large skillet over medium-high heat. Add the leek and garlic with a pinch of salt and sauté for about 2 minutes. Add the mushrooms, crumble the bouillon cube over the pan with your fingers, stir well, and cook for another 2–3 minutes.

Once the mushrooms are tender, add the spinach. If it’s not fully thawed yet, cook it a little longer while letting it thaw completely. Reduce the heat slightly, then stir in the cream cheese. Season the sauce with salt, pepper, and nutmeg, and finally fold in the Spätzle.

Transfer the vegetable-Spätzle mixture into a baking dish, spreading it out evenly. Sprinkle the grated cheese on top and bake for 20 minutes at 400°F (200°C) until golden and bubbly.
