Spicy Burger with Creamy Sriracha Sauce

Instructions
1
Heat a skillet on medium heat with 1 tsp of oil and then begin preparing the meat.
2
In a large mixing bowl, combine ground beef, breadcrumbs, minced garlic, egg, seasonings, and milk. You can wear gloves and use your hands to mix.
3
Once combined, press it together and make a large ball. Then slice into 4 quarters and shape each one into a 4” diameter patty (or to size of your buns).
4
Place patties on skillet and cook for 5 minutes on each side. (I didn’t want to overcrowd my pan so cooked two at a time.)
5
As the patties cook, wash and prep your vegetables. Slice the tomato and onions.
6
To make the sauce, combine sriracha and mayo in a small bowl. You can add more sriracha to make it spicier.
7
Check the patties and flip it if it has been 5 minutes. Then add a cheese slice on top.
8
Now is the time to heat your buns, if you desire. You can put it in the toaster if it fits or toast in the oven for 3-5 minutes.
9
Once everything is cooked, assemble your sriracha mayo burgers.
10
Serve as is or with a side of french fries or chips. Enjoy!

Tips & Tricks (5)
- Don't Overwork the Meat 🍔Mix ground beef gently with breadcrumbs, egg, and seasonings using just your fingertips for 30 seconds to avoid dense, tough patties that lose their juiciness.
- Create a Flavor-Locking Sauce 🌶️Balance your sriracha mayo by adding a splash of lime juice and a teaspoon of honey to cut the heat while creating depth and preventing the sauce from tasting one-dimensional.
- Toast Buns with Precision 🍞Brush bun insides lightly with mayo, then toast face-down on the cooktop for 30-45 seconds to create a protective barrier that prevents sogginess from juices and sauce.
- Layer Cheese While Hot 🧀Place pepper jack cheese on the burger during the last 30 seconds of cooking while still on heat, then tent with foil for 1 minute to ensure complete melting that binds all flavors together.
- Use a Meat Thermometer for Consistency 🌡️Aim for 130-135°F internal temperature for perfect medium-rare doneness, as carryover heat will bring it to 135-140°F for that signature juicy, tender texture.
