Spicy Honey Lime Chicken Legs
Instructions
1
Place the honey, lime juice, chili powder, cumin, and cayenne pepper in a gallon-sized zip-top bag. Seal the bag and shake vigorously to combine. Add the garlic and chopped cilantro.
2
Season the chicken legs liberally with salt and black pepper. Add chicken to the bag. Seal the bag and gently shake to thoroughly coat the chicken with marinade.
3
Transfer the chicken legs to the refrigerator and marinate for at least 1 hour, and no longer than 8 hours.
4
Preheat the oven to 375°F.
5
Line a large baking sheet with aluminum foil and spray with nonstick cooking spray.
6
Using tongs, arrange chicken legs on the baking sheet, allowing any excess marinade to drip off into the bag.
7
Roast the chicken legs on middle rack of oven until they are slightly brown, 20-30 minutes.
8
Set oven to broil. Broil until skin is caramelized and chicken has reached an internal temperature of 165°F, 3-5 minutes. Keep a close eye on chicken to ensure it does not burn.
9
Check to see that chicken is done. Remove from oven or add time as needed.
10
Serve with lime wedges and extra honey for drizzling, if desired.

Tips & Tricks (5)
- Marinade Timing for Maximum Flavor 🍯Marinate the chicken legs for at least 4-6 hours (or overnight) to allow the honey, lime, and spices to penetrate deeply, creating more complex and balanced flavors throughout the meat.
- Pat Dry for Better Browning 🔥Remove chicken from marinade and pat completely dry with paper towels before cooking to achieve a golden, caramelized crust while the honey glaze develops a beautiful color.
- Reserve Marinade for Glazing ✨Set aside a portion of raw marinade before adding raw chicken, then boil it separately for 3 minutes to safely use as a finishing glaze that amplifies the sweet and spicy profile.
- Balance Sweet and Heat 🌶️Taste your marinade before cooking—if too spicy, add more honey; if too sweet, add more fresh lime juice and cayenne to achieve the perfect sweet-heat balance for your preference.
- Internal Temperature Precision 🌡️Use a meat thermometer to verify chicken legs reach 165°F at the thickest part (near the bone) for food safety while preventing overcooked, dry meat that loses the marinade's flavors.
