  • 4 cup - cauliflower rice
  • 1  - red bell pepper
  • 1  - yellow bell pepper
  • 1 cup - snap peas
  • 4 cloves - garlic
  • 2 tablespoon - low-sodium soy sauce
  • 1 tablespoon - sriracha sauce
  • 1 tablespoon - sesame oil
  • 1 tablespoon - olive oil
  •   - Salt
  •   - Pepper
  •   - green onions
  •   - Sesame seeds

  1. Heat olive oil in a large pan over medium-high heat. Add minced garlic and cook until fragrant.
  2. Add shrimp and sauté until pink and opaque. Remove and set aside.
  3. In the same pan, add red and yellow bell peppers, and snap peas. Cook until tender-crisp.
  4. Stir in cauliflower rice and sauté until heated through.
  5. In a bowl, mix soy sauce, sriracha, and sesame oil. Pour the sauce over the vegetable mixture.
  6. Return shrimp to the pan and toss until everything is well coated and heated.
  7. Season with salt and pepper to taste.
  8. Divide into four containers and garnish with sesame seeds and chopped green onions.
