These baked sweet potatoes are split open and filled with a creamy spinach and feta mixture, flavored with garlic, shallots, and a hint of chili flakes for a gentle kick. The sweet potatoes are roasted until tender, then stuffed and returned briefly to the oven to warm the filling, creating a hearty, flavorful, and wholesome vegetarian meal that’s perfect for lunch or dinner.

Instructions

1
|
Preheat the oven to 180°C (350°F) fan-forced or 200°C (400°F) conventional. Wash the sweet potatoes thoroughly and pierce them all over with a fork. Wrap the potatoes in aluminum foil or place them directly on a baking sheet and bake for 45 minutes, or until tender throughout. Very thick potatoes will need approximately 15 minutes longer.
2
|
Peel and finely dice the shallot and garlic. Wash and roughly chop the spinach. Add olive oil to the pan and sauté the diced garlic and shallot over medium heat until translucent.
3
|
Add the spinach and stir until wilted. Crumble the feta and stir it in along with the cream cheese. Season with salt, pepper, and chili, and let it thicken over low heat for one to two minutes.
4
|
Remove the sweet potatoes from the oven and cut a slit in the middle. Gently open the potato and loosen the flesh with a fork. Divide the filling between the two potatoes and return them to the oven for 8 to 10 minutes at 180°C (350°F) convection or 200°C (400°F) conventional oven. Serve immediately.

Tips & Tricks (5)

  • Sweet Potato Roasting Perfection 🍠
Rub sweet potatoes with olive oil and pierce multiple times to ensure even cooking and prevent bursting during roasting.
  • Moisture Magic for Spinach 🥬
After sautéing spinach, drain excess moisture completely to prevent a watery filling that could make the sweet potato soggy.
  • Cheese Melting Technique 🧀
Mix cream cheese and feta at room temperature for smoother blending and more even distribution throughout the filling.
  • Flavor Layering Trick 🌶️
Toast chili flakes in olive oil for 30 seconds before adding to the spinach mixture to unlock deeper, more complex heat.
  • Crispy Potato Skin Hack 🔪
After initial roasting, lightly score the sweet potato skin in a crosshatch pattern to create more surface area for crispy edges.
