Spinach and Feta Stuffed Sweet Potatoes

Preheat the oven to 180°C (350°F) fan-forced or 200°C (400°F) conventional. Wash the sweet potatoes thoroughly and pierce them all over with a fork. Wrap the potatoes in aluminum foil or place them directly on a baking sheet and bake for 45 minutes, or until tender throughout. Very thick potatoes will need approximately 15 minutes longer.

Peel and finely dice the shallot and garlic. Wash and roughly chop the spinach. Add olive oil to the pan and sauté the diced garlic and shallot over medium heat until translucent.

Add the spinach and stir until wilted. Crumble the feta and stir it in along with the cream cheese. Season with salt, pepper, and chili, and let it thicken over low heat for one to two minutes.

Remove the sweet potatoes from the oven and cut a slit in the middle. Gently open the potato and loosen the flesh with a fork. Divide the filling between the two potatoes and return them to the oven for 8 to 10 minutes at 180°C (350°F) convection or 200°C (400°F) conventional oven. Serve immediately.
