  • 12  - eggs
  • ¾ Cup - feta
  • 1 cup - baby spinach
  • 1 Cup - mushrooms
  • ½ Cup - fresh basil
  •   - salt
  •   - pepper

  1. Preheat the oven at 400 degrees F.
  2. Shred the spinach, and finely chop the mushrooms and basil.
  3. Crack the eggs into a large mixing bowl, and season with salt and pepper.
  4. Whisk the eggs until well combined.
  5. Add the baby spinach, mushrooms, basil, and feta to the eggs. Sitr to combine all of the ingredients.
  6. Line a muffin tin with 12 baking cups. Pour the egg mixture into the baking cups until 3/4 full.
  7. Bake at 400 degrees F for 20 minutes.
