Ingredients

  • 5 ounces - baby spinach
  • 1 - apple
  • ⅓ cup - feta cheese
  • ⅓ cup - dried cranberries
  • ⅓ cup - walnuts
  • apple cider vinegar dressing
  • 6 tablespoons - extra virgin olive oil
  • ¼ cup - apple cider vinegar
  • 2 tablespoons - maple syrup
  • 1 tbsp - dijon mustard
  • salt

Instructions

  1. Preheat the oven to 350 degrees. Place the walnuts on a rimmed baking sheet and bake for 8-10 minutes or until golden brown and fragrant. Set aside to cool slightly.
  2. Place the spinach, apple, feta cheese, dried cranberries and walnuts in a large bowl. Toss gently with the desired amount of dressing and serve immediately. Enjoy!
