Tips & Tricks (5)
- Slice Against the Grain 🔪Cut the sirloin steak against the grain into thin strips before cooking to break down muscle fibers, ensuring maximum tenderness and faster, more even cooking in the wok.
- Cornstarch Coating Secret ✨Toss your steak strips with cornstarch before searing to create a silky, velvety texture that traps the sauce beautifully while allowing for quick, high-heat cooking without drying out the meat.
- Broccoli Pre-Cook Technique 🥦Blanch broccoli florets in boiling salted water for 2-3 minutes before stir-frying to ensure they stay crisp-tender and properly cooked through, preventing that tough, undercooked center.
- Sauce Balance and Timing 🥢Mix your sauce ingredients (soy, hoisin, rice vinegar, sesame oil) in advance and add it in the final 30 seconds of cooking to prevent overcooking while achieving a glossy, clingy glaze that coats every ingredient.
- Garlic and Ginger Infusion 🧄Bloom freshly minced garlic and ginger in hot oil for just 15-20 seconds before adding other ingredients to release their essential oils and create an aromatic foundation that elevates the entire dish.
