Tips & Tricks (5)
- Master the Fruit-to-Thickener Ratio 🍓Use 1-1.5 tablespoons of cornstarch per pound of fruit to achieve the perfect filling consistency—too little and it will be runny, too much and it becomes gluey when cooled.
- Macerate Strawberries for Deeper Flavor 🍓Toss strawberries with sugar and grapefruit juice 30 minutes before assembling to draw out natural juices and intensify the filling's tartness and sweetness balance.
- Keep Dough Cold for Maximum Flakiness ❄️Work with chilled pie crust and chill the assembled galette for at least 20 minutes before baking to ensure the butter stays separated and creates those coveted flaky layers.
- Strategic Grapefruit Placement 🍊Arrange grapefruit slices on top in the final 10 minutes of baking to prevent over-cooking and bitterness while maintaining their vibrant color and slight firmness.
- Egg Wash Application for Golden Elegance ✨Brush egg wash only on the crust edges (avoiding the fruit) and sprinkle sanding sugar immediately after for a beautiful caramelized finish that won't become soggy from fruit juices.
