Tips & Tricks (5)
- Bread Selection Matters 🍞Use day-old brioche or challah bread that's about ¾-inch thick—fresh bread absorbs too much egg mixture and becomes soggy, while day-old bread maintains its structure and creates a perfect custardy interior.
- Mascarpone Prep Trick 🧈Let mascarpone sit at room temperature for 15 minutes before mixing with sugar and vanilla to ensure it spreads smoothly without tearing the bread during stuffing.
- Strawberry Drainage 🍓Pat fresh strawberries completely dry with paper towels and slice them just before assembly to prevent excess moisture from soaking into the filling and making the toast soggy.
- Egg Custard Balance ⚖️Use a 2:1 ratio of milk to eggs (¾ cup milk to ⅜ cup eggs) for the custard mixture—this creates the ideal texture that soaks into the bread without making it overly wet or runny.
- Medium-Low Heat for Even Cooking 🔥Cook on medium-low heat for 3-4 minutes per side to allow the mascarpone filling to warm through and the bread to golden evenly without the exterior burning before the inside cooks.
