In a large bowl, combine SunButter, protein powder, maple syrup, and salt. Mix until a thick dough texture is formed.

Press the mixture into an 8x4-inch loaf pan lined with parchment paper.

To make the chocolate layer, add chocolate chips and coconut oil to a small microwave-safe bowl. Heat in the microwave in 30-second intervals, stirring in between, until completely melted. Pour the melted chocolate over the SunButter layer and spread evenly. Sprinkle with flaky sea salt if desired.

Place in the fridge for 1 hour before slicing into 8 bars or squares. Enjoy!
