This recipe is a trendy, oven‑baked sushi casserole that layers seasoned sushi rice with a creamy mixture of salmon, sautéed mushrooms, spring onions, cream cheese, mayo, and Sriracha, then bakes it until warm and flavorful before serving it with chopped nori sheets. The dish takes all the beloved elements of sushi — seasoned rice and savory toppings — and turns them into a comforting, easy‑to‑prepare baked meal, with options to swap in tuna, shrimp, or other proteins and add vegetables for a healthier twist.

Instructions

1
|
Wash, cook, and soak the sushi rice according to the package instructions. Meanwhile, combine rice vinegar, sugar, and salt in a small pan or saucepan and heat over medium heat until the sugar has dissolved. Fluff the cooked sushi rice and toss it with the rice dressing.
2
|
Preheat the oven to 220°C (430°F). Clean the mushrooms, chop them finely, and sauté them in a pan for 5 to 7 minutes, until they are nice and soft.
3
|
Meanwhile, skin the salmon if necessary and cut it into the smallest possible cubes. Wash the spring onions and cut them into thin rings.
4
|
Place salmon cubes, the white part of the spring onions, fried mushrooms, mayonnaise, cream cheese and sriracha into a bowl and mix together, season generously with salt and pepper.
5
|
Grease a baking dish with a little oil and spread the sushi rice in it. Distribute the mushroom and salmon mixture evenly over the rice.
6
|
Place the sushi casserole in the oven for about 12 minutes, until the surface is lightly browned. Meanwhile, cut the nori sheets into 9 equal squares each.
7
|
Remove the sushi casserole from the oven, top with the remaining spring onions and toppings of your choice and serve with the nori sheets.

Tips & Tricks (5)

  • Rice Vinegar Magic 🍚
When preparing sushi rice, mix rice vinegar, sugar, and a pinch of salt while the rice is still hot to ensure even seasoning and authentic flavor.
  • Salmon Prep Perfection 🐟
Pat salmon fillets completely dry with paper towels before cooking to ensure a crisp exterior and prevent excess moisture in the casserole.
  • Layering Technique 🥘
Create even layers by using the back of a spoon to gently press and distribute the rice and salmon mixture, ensuring a consistent texture in every bite.
  • Nori Crispness Hack 🌊
Toast nori sheets briefly over a gas flame or in a dry pan for 10-15 seconds to enhance their flavor and prevent sogginess when added as a topping.
  • Sriracha Balance 🌶️
Mix Sriracha with cream cheese and mayonnaise gradually, tasting as you go to achieve the perfect level of heat without overpowering the delicate salmon flavor.
